RECIPE: FRUIT AND OAT BARS


WHITE HOUSE FRUIT AND OAT BARS


My friend Lisa made this for me and I fell in love instantly. So healthy and delicious– my favorite! It's a recipe made by the chef for the white house : ) 

INGREDIENTS
1/3 cup Grapeseed oil
2 cups Rolled Oats
3/4 cup mixed seeds (pumpkin, chia, flax)
1/3 cup Honey
1/3 cup Agave Nectar or Maple syrup
1/2 cup Brown sugar
pinch of Sea Salt
shake of Cinnamon
dash of Vanilla
 2 cups mixed dried fruit (raisins, cranberries, cherries, currents)


1) Heat oven to 350 F, line a 9x13-inch baking pan with parchment paper or foil, letting a few inches hang over side of pan. Brush with oil.
2) Spread oats and seeds on another baking pan and toast in oven just until golden and fragrant, 6 to 8 minutes, shaking pan once.
3) In a saucepan, combine oil, honey, brown sugar, maple syrup and salt. Stir over medium heat until smooth and hot.
4) In a mixing bowl, toss together toasted oats and seeds, dried fruit and cinnamon. Pour hot sugar mixture over and stir until well combined.
5) While mixture is warm, transfer to prepared pan, pressing into pan evenly with an offset spatula.
Bake until brown, 15-25 minutes depending on desired texture. I think it tastes better as a soft "crumble" instead of a crisp "bar" (15 min). Transfer pan to a rack and let cool completely. *(It continues to harden as it cools)
