RECIPE: ZUCCHINI-TOMATO DISH



(Serves 2)
INGREDIENTS
1 LARGE ZUCCHINI
1 MEDIUM TOMATO
1/3 cup ONION
THIN SLICES OF FRESH MOZZARELLA CHEESE





MIX IN A SMALL BOWL:
2 tbsp OLIVE OIL
1 tsp MINCED GARLIC
1/2 tsp BASIL
SALT & PEPPER

STEPS:
1. PLACE CHOPPED VEGETABLES IN A BAKING PAN

2. THEN PLACE THIN SLICES OF MOZZ. CHEESE ACCROSS THE TOP OF THE VEGGIES

3. DRIZZLE THE BOWL OF OLIVE OIL MIX OVER ENTIRE AREA

4. BAKE DISH FOR 20-25 MIN IN OVEN AT 350 DEGREES

*The veggies should be easy to poke through with a fork when fully cooked.

Add a little more salt and pepper before serving : )

I added more mozz cheese on top of all the veggies the 2nd time and liked it a lot more : )
