RECIPE: STRAWBERRY SHORTCAKE


 INGREDIENTS
Gluten free Shortbread Cookie mix
Heavy Whipping Cream
Strawberries
Sugar




1 whole pkg GF Shortbread Cookie Mix 
1 1/2 sticks unsalted Butter (cut into 8 pieces)
1 large Egg Yolk 
2 Tb Water  

 2 cups Heavy Whipping Cream
1/2 cup Sugar

Whip on high for a few minutes until cream thickens to desired texture.

A shot of Rebekah really going for it.

I saw that Bisquick now makes a gluten free version, so that is an option also if that's easier for you to find. (However, one of the ingredients is "modified potato starch" which sounds like GMO's to me...)

 *Red Mill also makes a "biscuit mix"... but its for regular dinner biscuits- not sweet enough for a dessert. (I tried!)
