RECIPE: BLACK QUINOA SALAD


INGREDIENTS
1 cup Quinoa
1 cup Spinach
1/3 cup Cranberries
1 Green Apple
1/3 cup Walnuts
1/3 cup Lowfat Feta
1/3 cup Red Onion
2 tbsp Apple Cider Vinegar
3 Tbsp Honey Mustard 
1 tsp Sea Salt

Boil the quinoa in a pan for 10-15 min. The instructions on the bag says 20 min, but mine always starts to burn around 12-15 min so keep an eye on it.

Chop the apple and onion. Then, mix all the ingredients together in a large bowl.
 Lastly, stir in the hot quinoa. 
The spinach leaves will nicely soften a little : )
